A crude enzyme preparation was obtained from the Aspergillus flavus BDU-44 by precipitation with acetone, ethanol and (NH4)2SO4. In all cases, the activity of acidic protease (pH5.5) was 1.4-1.5 times higher than the activity of neutral and alkaline proteases. Studied the properties of acidic protease. It has been shown that the maximum activity of the acidic protease of the Aspergillus flavus BDU-44 is manifested at 600C and the enzyme retains its activity at 50-600C for 3 hours. The optimum acidity of the medium for the manifestation of the maximum activity of the enzyme is pH 4.5, and the greatest stability of the enzyme is observed at pH 4.0-5.0.

Keywords:Aspergillus flavus, acid protease, temperature and pH optima, thermal and acid resistance
