In the proposed article, the author, in a historical perspective, examines the development of grocery trade in the Russian province from the second half of the 1860s to the 1910s. using the example of the city of Novorossiysk. This mini-study analyzes the issue of improving the shopping service from a grocery store to a grocery store. The development of grocery trade in modern Russia is associated with certain customer requests. The main factor of demand for a particular product, as before, remains the ratio of price and quality of products. However, this is far from the only indicator that the consumer is guided by. Tastes, fashion, speed, and quality of service play an important role. In this regard, the experience of previous generations is of interest, therefore, the history of trade development is an important source in replenishing the experience of contemporaries. Food trade has a special place in this issue, since food is a primary necessity at all times. As a result of the research, the author came to the conclusion that the main difference between a grocery store and a grocery store is the level of class and the scale of turnover. The advantageous geographical location also played an important role in the development of trade in Novorossiysk. The growth in the scale of trade turnover led to fierce competition between entrepreneurs and, as a result, increased customer service culture
